[Arara, Dark Room] First of the Dark Room series from Fazenda Um, the Arara variety hails from the Espírito Santo region. It goes through a Pulped Natural process, fermented in an Anaerobic environment for 48 hours before being dried in a Dark Room for 40 days. The result from this is a fruit forward coffee with distinctive sweetness.
It starts off with flavors of dried mango, and malic type acidity that reminds us of a yellow peach. The overall sweetness character is prominent, reminiscent of a dark honey. Structured, balanced and layered at the same time.
This coffee is gives an elegant, distinct fruit forward character which we really appreciate.
