This will be our first Carbonic Maceration offering and its a natural processed lot. Los Pirineos is no stranger to the specialty coffee industry and is famed for the quality of coffees produced by the family. This lot is fermented in a sealed tank and its filled with Carbon Dioxide to push out all the oxygen in the tank. The temperature, humidity and yeast activity is then controlled throughout the fermentation process. The extended contact of the coffee skin and anaerobic fermentation is aimed to intensify the fruit characters of the coffee, and length of the coffee. We personally liked this coffee as it is much cleaner than other Carbonic Maceration natural processed coffees that we tasted. The length of this coffee is long and flavors of this coffee reminds us of Yellow fruits, think of Mango and Yellow Peaches.
